I grew up in a world that worshipped bread. From breakfast toast to pizza nights, carbs were comfort and tradition. No one questioned it. Lasagna meant love, and skipping dessert felt like rejecting grandma. I never imagined that changing my diet could change how I felt.
By my early 40s, I was always exhausted, bloated, and foggy-headed. I wasn’t overeating or allergic to anything, but my digestion was a mess, my skin broke out, and I ran on caffeine. I tried Whole30, paleo, fasting, and even juice cleanses. Nothing worked for long.
Then a friend casually mentioned he hadn’t eaten a vegetable in months. He looked great and said he followed the carnivore diet, just meat, salt, butter, and water. It sounded crazy, yet oddly freeing. Curious, I researched late into the night and found people who'd healed chronic issues with this diet. The simplicity was compelling: eat meat, drink water, repeat.
Starting was tough. My fridge looked like a butcher shop. Friends joked I wouldn’t survive a month. I had headaches, low energy, and missed bread. Eating out got awkward. But I kept going.
By week three, something clicked. I woke up refreshed, the 3 p.m. crash vanished, and my stomach flattened. My cravings disappeared. I didn’t feel deprived. I felt clear, calm, and in control.
Social situations were the hardest. Declining cake turned into debates. People felt challenged by my plate. But I learned to navigate it. I chose steakhouses, ate before events, and reminded myself my health wasn’t up for discussion.
After three months, I’d lost 16 pounds, slept deeply, and felt sharper than ever. My gym sessions improved, and lifelong anxiety started to fade. The hardest part was realizing this worked, despite everything I’d been taught. I don’t claim this is for everyone, but for me, it brought peace.
I stayed a strict carnivore for six months. Now, I allow the occasional egg, cheese, fish, or fruit, but the foundation is still meat.
I’ve gained clarity, energy, and a new relationship with food. In a carb-loving world, I found my way. One steak at a time!
